I "tweaked" this recipe a bit to give it a little different variety! Points changed a little too! So here goes...
1/2 cup fat-free egg substitute
1/2 teaspoon chili powder
1 (10-inch) reduced-sodium whole wheat tortilla (I use the Flatout flatbread light original)
1 tbsp shredded fat-free Cheddar cheese or low-fat shredded mozzarella cheese
2 tbsp fat free salsa
2 tbsp fat free sour cream
1/4 avocado
1. Heat butter spray in a small non-stick skillet over medium heat. Add egg substitute and chili powder and cook, stirring frequently, until set, about 3 minutes.
2. Place tortilla between 2 paper towels and microwave on HIGH until warm, about 20 seconds. Fill tortilla with egg mixtures. Top with cheese, salsa, sour cream, & avocado. Roll up tortilla!
SERVES 1
