Thai-Style Beef Salad, that's what!!
Ingredients:
2 tbsp seasoned rice vinegar
1 tbsp reduced-sodium soy sauce
1 tsp packed brown sugar
1 (16 oz) bag coleslaw mix
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh mint
1/2 pound sliced lean sirloin meat, cooked (grilled, if preferred), cut into strips
2 tbsp unsalted dry-roasted peanuts
Combine vinegar, soy sauce, and brown suger in a large bowl. Add coleslaw mix, cilantro, and mint; toss to coat. Top with beef and peanuts, and serve.
